

1 cup rolled oats
1 cup buttermilk
1 egg
1/3 cup brown sugar
1/3 cup butter, melted
1 cup sifted white flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1. Heat oven to 400ºF. Combine oats and milk. Add egg and brown sugar. Beat well and stir in butter. Add dry ingredients and mix only until dampened.
2. Bake in muffin pan using cupcake liners or release spray and bake for 20 minutes.
Yield: 1 Dozen
